Cake love without sugar

Baking is a thing I really love and it calms me down somehow and let’s me to be super creative! That’s why I’m always trying to make new things, add different ingredients and change the receipt somehow, but still it has to taste good!

This time I asked my followers on Instagram if they wanna see the receipt of the cake I made last week and so many of wanted to see it, so I thought I will do a blogpost as I think it’s easier for you to have a look at it over and over.

No sugar baby – only almonds!

Ingredients

6 eggs

140g almonds

1,5 spoons flour (you can use any flour you like for example coconut flour, chickpeas flour, gluten-free flour and so on!)

1 teaspoon backing powder

Of course you can add some coconut sugar, apple syrup, agave syrup, mashed bananas, or any other to make it a little bit sweeter

1 cup raspberries

1 cup blueberries

Instructions

Start separating the egg white and yellow. Then slowly whip the egg whites until they are totally fluffy. And after it is totally fluffy add the yellow of the eggs very slowly.

In the mean time mix up the almonds with the flour and baking powder. And if you want to add some sugar add it here to the mass.

And now mix everything together but very slowly so that the mass gets very fluffy.

Just put it into a baking case for example a heart for your love 🥰 and put it into to the oven for 45 minutes at a temperature of 180 degrees.

After 10-15 minutes add on top the berries so that some of the fall and others stay at the top. Your glatt will smell incredible and it will be hard to wait till the end but after 45 minutes the cake is ready and you can take it out of the oven and enjoy your well deserved piece!

Alternative

If you want to top it up you can cook some vanilla or chocolate pudding in the mean time. Add it on top of the cake and freeze it now for a few hours. After this I would recommend you also to add chocolate glaze at the top. Of course you can use all the ingredients without sugar! I always buy the ingredients at organic shops because they have them without sugar! Also the chocolate glaze can be bought from 100% cacao. It taste amazing and you know that it’s super healthy for your body even if you are eating a cake.
